To achieve an over well yolk (firm), follow this method:

Cashew Gravy
Blend until smooth, then cook over low-medium heat, stirring constantly.
- 1/4 c. Cashew Nuts, raw and unsalted
- 1 1/2 t. Cornstarch
- 1 Beef-Style Bouillon (Edward & Sons)
- 2 c. Cold Water
- 1/4 c. Mushroom Pieces (optional)
Italian Pepper Blend
Saute equal portions of sliced onion, green pepper, and red pepper in extra virgin olive oil.
Add 1 T. applesauce and 1/2 t. minced garlic for every cup of fresh sliced onions and peppers.
Season with Italian seasoning and sea salt.
Serve over vegan Italian sausage (Tofurky brand preferred) in a low-calorie hot dog bun. Add mayo and mustard.

Pico de Gallo
I made this pico de gallo based off the Wegman's version, as theirs is quite frankly the BEST. I came pretty close, I might say. Make it ahead of time so juices have a chance to blend well.
We serve this over haystacks.
- 5 roma tomatoes, diced
- 1/4 medium sweet onion, finely diced
- 2 slices of jalapeno, finely diced (NOT 2 jalapenos)
- 1/4 t. TrueLime Cilantro, Lime, Garlic seasoning
- pinch of Kosher salt

- 1 t. True Citrus Orange-Ginger
- 1/2 t. imitation vanilla flavor

In a saucepan, simmer down till berries pop and thicken...
Transfer to jar and refrigerate till it sets.
- 4 c. berries (raspberries or strawberries, etc.)
- Line bottom of pan with a little water
- 2 T. Truvia
