SAVORY Sauces, Seasoning, Toppings

Vegan Eggy Yolk
Cashew Gravy
Italian Pepper Blend
Pico de Gallo
Vegan Eggy Yolk
1 Vegan Eggy Yolk = 
  • 1/4 t. Kala Namak Salt
  • 1/4 t. Turmeric
  • 1/2 t. Cornstarch or 1/8 t. Agar Powder
  • 2 t. Nutritional Yeast
  • 3 T. Cold Water
This will be enough "yolk" for 1 bar of extra firm silken tofu sliced into approximately 16 to 18 pieces.
Adapted from Mouth Watering Vegan.
To achieve an over well yolk (firm), follow this method:
  • 1/8 t. Kala Namak Salt
  • 1/2 t. Nutritional Yeast
  • 1 T. chickpea flour
  • 1 T. water
Cashew Gravy
Blend until smooth, then cook over low-medium heat, stirring constantly.
  • 1/4 c. Cashew Nuts, raw and unsalted
  • 1 1/2 t. Cornstarch
  • 1 Beef-Style Bouillon (Edward & Sons)
  • 2 c. Cold Water
  • 1/4 c. Mushroom Pieces (optional)
Italian Pepper Blend
Saute equal portions of sliced onion, green pepper, and red pepper in extra virgin olive oil.
Add 1 T. applesauce and 1/2 t. minced garlic for every cup of fresh sliced onions and peppers.
Season with Italian seasoning and sea salt.

Serve over vegan Italian sausage (Tofurky brand preferred) in a low-calorie hot dog bun. Add mayo and mustard.
Pico de Gallo
I made this pico de gallo based off the Wegman's version, as theirs is quite frankly the BEST. I came pretty close, I might say. Make it ahead of time so juices have a chance to blend well.
  • 5 roma tomatoes, diced
  • 1/4 medium sweet onion, finely diced
  • 2 slices of jalapeno, finely diced (NOT 2 jalapenos)
  • 1/4 t. TrueLime Cilantro, Lime, Garlic seasoning
  • pinch of Kosher salt

​We serve this over haystacks.

I use this sugar-free cranberry recipe with very minor changes. Super easy!

In a non-stick sauce pan, simmer till super thick,
  • 12 oz. cranberries, fresh
  • 3/4 c. water
  • 3/4 c. Truvia
  • 1 t. True Citrus Orange-Ginger
  • 1/2 t. imitation vanilla flavor
Berry Jam
In a saucepan, simmer down till berries pop and thicken...
  • 4 c. berries (raspberries or strawberries, etc.)
  • Line bottom of pan with a little water
  • 2 T. Truvia
Dissolve 1 t. agar agar powder (or 2 t. agar agar flakes) in 1/4 c. cold water. Then add agar water to simmering berries and mix well. Allow to simmer (low boil) for at least 1 more minute to activate the agar). 
Transfer to jar and refrigerate till it sets.
